Fantasy:

Anything by Terry Goodkind, Robert Newcomb, R.A. Salvatore, Kate Elliot, and Anne McCaffrey are beyond excellent.

Sci-Fi:

Orson Scott Card's Ender's Game series dominates this genre, and is the best Science Fiction series ever.

You might like Barry Eisler's Jun Rain series.

Starting at the first one is not necessary but you get a better feel for his character and the way his writing improves.

Excellent stories...

My top four are A Clockwork Orange, One Flew Over the Cuckoo's Nest, The Catcher in the Rye, and Grapes of Wrath. Actually all of Steinbeck's short stories are really worth reading.

Ender's Game is pretty damn good too.
